All you need to do is to record the output of the turntable to the line-in of the soundcard. You can use some cool program like CoolEdit or Soundforge for that, and also for cleaning up the sound if necessary.
I've heard some fantastic vinyl mp3-rips, so it should be possible to get good results.

Like Marco said above...SoundForge is a good program for this. You can even clean it up using that program. Yes, you will need to use the soundcard to capture the sound. Depending on what type of soundcard you have, you will have different options to record it. Most soundcards (the cheaper ones) will have a small input "line in". You will probably need an adapter to record into that. Other sound cards, like the one I own (SB Audigy Platinum) will give you better input options...like regular rca jacks.
